This pepper has been a required crop at Riverpark Farm since its opening in 2011. Chef Sisha Ortuzar provided seed for his all time favorite Chilean pepper variety, and I’ve been growing it out and selecting for size and flavor ever since. Finally Rooftop Ready Seeds was able to grow it out at production scale and get a great crop of seeds!

Aji Cristal is a national obsession in Chile. This 3 to 4” long fruit changes from green (hence its nickname ‘Aji Verde’) to yellow to burnt red when fully ripe. It is commonly picked at the yellow stage and pickled or eaten fresh. Thin-skinned and crisp, slightly citrusy flavors make this a great pickling pepper and a welcome addition to hot sauces. This is a large Capsicum baccatum cultivar that takes up more lateral space than your average chile.

To Sow

  • Date: Start Indoors March 1-April 15, Transplant May 15-June 15
  • Planting Depth: ¼ in.
  • Special Instructions: Make sure to keep soil temperature above 70 degrees when starting chile seeds indoors. Keep seed starts close to a radiator or space heater or use a greenhouse heating pad.
  • Germination Rate:

To Grow

  • For Raised Beds: Space plants 12 in. apart, leaving 18 in. spacing between rows. Stagger rows to increase number of plants per bed.
  • For Containers: Plant in a deep container measuring at least 5 gallons.
