Sometimes classified as an herb for it’s spice and flavor, this peppery green is great in salads, as a base for pesto, or wilted and served with pasta. Roquette is a round-leaf variety Arugula you won’t find in a clamshell at that big green grocery store. Juicier and much more intensely-flavored than more commonly found “wild” varieties.
Planted tight, Arugula can be harvested as a baby green (about 3 in.) by cutting along the “crown” of the plant, allowing young, smaller leaves to grow in their place. This is known as the “cut and come again” harvest method, and works great with arugula.
